Does this mean that if I eat enough of them that I wont decay, get moldy or have any bugs?.....Getting hard would not be much of a problem as far as I'm concerned.  ;D

I don't believe that.
maybe in a closed, air free environment you can save it for a wile, but when you leave your bread or fries for a couple of weeks they get quit moldy.

The key here is "DRY" air!
Dad and I used to 'age' our meat for home use in the walk-in cooler of the
restaurant.
We simply opened the package, set the meat on the top shelf of the cooler in the
direct blast of the airflow and turned it once a day for 4 - 6 days.
When ready to cook most other people would have thrown it out because of the
rather strange color variation but once prepared it was the best meat available
on this planet!
Tough to do without a constant stream of Cool, DRY AIR!

your right GB, good conditions are crucial.
next to the dry air the temperature should between 32 and 36F.
I know that they  sell rib-eye steak that is "matured" for 27 days.
this will change protein into enzymes which makes the steak tender.

I bet your right, saying you had the best steak there is!
(getting hungry  :D)

The reminded me why I don't eat at the big Mc, but don't know if the stuff I eat is much beter wonder what would happen to a KFC menu after that many days. :P

When we put a beef down, It is gutted, skinned, quartered and hung in my walk in cooler for at least 12 days.
It is home raised and grain/grass fed.  We only butcher steers and we name them all either Hamburger or Eatin' Meat.  It is only for our selves.  Each critter is deboned muscle by muscle.  It takes 4 days to cut a beef but oh it is very good eating.

you know that most people don't think about where the meat is coming from. (or the don't want to know)
when the kids were younger and we saw some cows in the field I always joked "look walking hamburgers"... ;D
when I told my nephew (+/-6y) my sister in law didn't like the joke  8)  :D :D :D

She should have made a homemade burger and fries and photographed that next to it.  Live and learn.
