As long as you use a 2 digit number it works fine.  I am not sure how they do that.

The symbols on the table change every time the game is played, that is why you're not seeing the same symbol every time.

If you choose a two digit number, every time you do the calculation (correctly) you will end up with a multiple of the number nine.   Look at his table, and all the multiples of nine have the same symbol.
