Does sealing stop.color changes?

I've read all I could find about color changes in wood over time.

I saw it up close last night. While wood shopping there was a cut off piece of green poplar that had turned brown. The salesman said it had been around forever because nobody wants a 1x12x3 piece of poplar. Trying not to smile I agreed and after he reduced the price to .75 per foot I bought it. I plan on using it for stems on a rose intarsia I'm doing for Valentines Day gift to my Wife.

,My questions are:
Does sealing intarsia stop the color change?
Is it worse on pieces exposed to sunlight or is time the only factor?
Would an automotive clear coat with a UV inhibitor help?

Is there a definitive chart? I see one here http://www.scrollsawer.com/techniques/selecting-intarsia-wood.html  but some posts contradict the info on it.
